Coconut Chicken with Mango Salsa, Garlic and Herb Green Beans, and Yellow Rice [532 calories]

I know I’ve given RaeRae a hard time because of the whole EVOO thing, but occasionally she gets it totally right. This recipe follows her instructions to the letter. Depending on the thickness of your chicken breasts, you may need to bake a bit longer.

Enjoy with garlic and herb green beans and saffron yellow rice.
